* be able to manage high hydration dough
* be able to manage techniques like autolysis
* be able to start, use and manage sourdough
* know how to make and use preferments like biga and poolish

Our advanced class is specially thought for single individuals or groups of maximum 5 people. Sessions are held in our kitchen. Classes for larger groups can be organized on request at your location. This classis for those that already have a basic knowledge of the pizza making process and would like to go more in the depth. The class will happen on Saturday and Sunday's for two mornings in a row, to be able to see the effects of 24 hours maturation on some ferments and pre-ferments...
